basically it's impossible to permanently void your warranty on an iPhone. No matter what goes wrong during or after a jailbreak, you can always restore it to factory settings using the shipped IPSW (you can find these easily) and restoring via iTunes, so I would not worry about this, just don't ever be stupid enough to take your jailbroken phone into Apple without first restoring first (and hence removing the jailbreak).

Here is where iphone modifications stand at the moment.

    Legally:
By law you are legally allowed to modify your phone (as of July) without the risk of prosecution.

    Warranty:
Apple has the right to disqualify you from any warranty they have if you jailbreak your iPhone. Technically speaking you can un-jailbreak your phone by doing a hard reset through iTunes but that in itself is illegal (lying to get a free device).

What Apple can do to stop it:
Apple can enforce its warranty disqualifications, break jailbreaks with iOS updates, and do anything else that will in effect make it impossible for you to jailbreak your device. In other words just because it is legal doesn't mean Apple has to allow it.
