If you didn't save them manually, you don't have them and can't downgrade.

Are you talking about apps from the Appstore?

there is no way of doing other fun stuff with my phone now that it is ios 5.1 if not i am truly disgusted

If you didn't manually back them up yourself on 5.0 or 5.0.1 you don't have them.

and I have no clue what the second part meant
