If you choose to "erase all contents and settings" via Settings.app on a Jailbroken iDevice, it will result in you having to restore. I don't know the actual reasons behind it, but something with the jailbreak doesn't jive with the OS when that action is taken. I have done this on an iPhone that I could not get iTunes to recognize, but it was not jailbroken. I think I read somewhere else that you said you already fixed it, but I want to put the word out there so someone else in a similar position will know what not to do.
